My Little Forkful: Irish Nachos

Irish Nachos

During one family gathering, I was peeling potatoes to mash. We weren’t going to be eating for a while, but everyone was getting hungry, so my dad suggested using the peels to make Irish Nachos to snack on while cooking and chatting. I had never heard of this dish, but I loved that we could make use of something I would normally throw way! The Irish Nachos turned out to be delicious, and they were gone in 5 minutes!

INGREDIENTS:

·       Potatoes (any variety)

·       Seasonings (rosemary, thyme, salt, and pepper)

·       Cheddar cheese, shredded

·       Bacon, diced (optional)

·       Toppings of choice

INSTRUCTIONS:

Wash and scrub the potatoes thoroughly. Peel them so that the peels are about ¼” thick. Drizzle with olive oil and season with rosemary, thyme, salt, and pepper. Roast on a baking sheet at 450 degrees until tender, about 20 minutes. Top with shredded cheddar and bacon if you have any. Return to the oven until cheese is melted.

Top with toppings on hand, including, but not limited to, sour cream, salsa or pico de gallo, cilantro, green onions, etc.

Serve and watch them disappear!
